This is one of my favorite dishes to cook. 
It’s Otsu and the recipe comes from Heidi Swanson at 101 cookbooks. All of her recipes lean towards healthy/vegetarian dishes. A few of recipes I’ve tried out that was a success is the tofu chocolate pie and mesquite flour chocolate chip cookies. There was a black bean agave brownie recipe that was not terrible but not something I would make again. The black bean replaced the flour thats normally in brownies which made it really moist and fudgey. I prefer my brownies with crisp edges so still searching for a good recipe. 
Anyways back to Otsu: 
Package of soba noodles, cucumber (seeded), cilantro, pan fried tofu, green onions, and toasted sesame seeds. For exact measurements click on the pic. 
Dressing:
Grated zest of 1 lemonFresh ginger, cut into a 1-inch cube, peeled, and grated1 tablespoon honey3/4 teaspoon cayenne3/4 teaspoon fine-grain sea salt1 tablespoon freshly squeezed lemon juice1/4 cup unseasoned brown-rice vinegar1/3 cup shoyu sauce (wheat-free soy sauce)2 tablespoons extra-virgin olive oil2 tablespoons toasted sesame oil
For the dressing I usually cut half the oil out, eliminate the ginger, and add a ton of honey. I’ve never measured out how much honey but I like my dressing sweet so I add and taste.
